Red Bank Recipes- Pumpkin Spice Cake

Need a last minute dessert to take to Thanksgiving, or a simple sweet breakfast to snack on while you cook Thanksgiving morning? This is 2 ingredients (3 if you want chocolate chips!), and is so simple and delicious! I made this last week for our church Thanksgiving potluck and it could not have been easier to make or travel with. I’m not typically a pumpkin spice fan, but this is one I like to make and eat every fall!

The two required ingredients are one spice cake mix and one can of pumpkin (not pumpkin pie filling!). I like to add chocolate chips (this time I did white chocolate chips, but semi-sweet, dark, milk, any chocolate works!), but I think you could also experiment with toffee chips, pecans, almonds, anything you like!

First, mix together the spice cake mix with the can of pumpkin. I used my stand mixer because the batter can end up being on the thicker side. At this point, fold in any additions you want. Pour into a greased Bundt pan for a Bundt cake, or loaf pan for more like a loaf cake. Because it’s thicker, you have to even it out yourself in the pan.

Bake at 350 degrees for about 25-30 minutes, until a toothpick (or butter knife, because I never think to buy toothpicks, haha!) comes out clean. Allow to cool in the pan, and then invert onto a serving plate. Serving can be versatile as well- this time, I just dusted powdered sugar over the top. You could dollop cream cheese frosting or pipe it on if you want to really lean into the sweet cake type serving, or leave it completely plain for more of a breakfast bread/ cake type serving. The possibilities are endless!

Ingredients
  

  • 1 box spice cake mix
  • 1 15 oz can pumpkin

Optional

  • 1 cup chocolate chips
  • pecans
  • toffee bits
  • powdered sugar
  • cream cheese frosting

Instructions
 

  • Preheat oven to 350°. Grease a baking dish, either a Bundt pan, loaf pan, or other preferred baking dish.
  • Mix together spice cake mix and pumpkin. Fold in any additional optional ingredients like chocolate chips, nuts, or toffee.
  • Bake at 350° for 25-30 minutes until a toothpick or knife comes out clean.
  • Allow cake to cool in baking dish and invert onto serving dish (or leave if baked in serving dish). Top with a dusting of powdered sugar, cream cheese frosting, or leave plain. Enjoy!
