I love tomato soup- it’s probably my favorite of all the soups. I mean, I love a lot of different soups, but to eat with a sandwich, tomato is my favorite. Normally I keep a few cans of Campbell’s tomato in the pantry along with Progresso chicken noodle (Steven’s fave) for the occasion we decide to just have soup and grilled cheeses for lunch or dinner. A few nights ago, Steven wanted soup and a grilled cheese, and after digging to the very back of the pantry and coming up empty on tomato soup, I decided to mesh together a few recipes I found and make it myself.
This is small batch because it’s really a large serving for one person or a small to medium portion for two people. I’m the only one around here who likes tomato soup, so I eat as much as I want with grilled cheese, and typically have about 1/3 left over. A lot of recipes I found called for you to cook everything and then puree it in a food processor or blender. I feel like the crushed tomatoes give a little texture, but are smooth enough. If you want it completely smooth, but you are sure welcome to blend it up for a minute or two. I found this to be close to Panera Bread’s tomato soup in consistency.

In a small or medium saucepan, combine one can of crushed tomatoes with chicken broth, heavy cream, flavored butter, and garlic salt.

Cook on medium heat until bubbling, and stir occasionally to keep ingredients combined.

After cooking for 5-10 minutes over medium heat, remove and serve up in a bowl with your favorite sandwich!

Small Batch Tomato Soup
Ingredients
- 1 14 oz can crushed tomatoes
- 3/4 cup chicken broth
- 2 T heavy cream
- 1-2 T flavored butter (I used Better Butter garlic parmesan basil; there is also Kerrygold garlic and herb. If you don't have flavored butter, combine your regular butter with 1 tsp of your favorite seasoning like garlic powder, basil, etc.)
- garlic salt to taste
Instructions
- In a medium saucepan over medium heat, combine the crushed tomatoes, chicken broth, heavy cream, and butter and stir until incorporated together.
- Cook for 5-10 minutes until bubbling and boiling and all ingredients are melted together.
